Thyme Variegated Lemon

Marjoram

Marjoram has a flavor similar to oregano, just a bit sweeter and more mild.  The flavor improves with drying.  It is used to flavor stuffing and sausage.  This highly aromatic herb is a hardy perennial.

Oregano

This hardy perennial is used to flavor Italian, Greek, and Mexican dishes, especially pizza.  Grows best in neutral pH soils with plenty of calcium.

Parsley

French parsley is curled while Italian parsley has a flat leaf.  Both are used to flavor many dishes from meats to vegetables.  It is a rich source of vitamins A, B, C, calcium, iron, and phosphorus.  Parsley is a hardy biennial and will go to seed the second year after planting.

Pineapple Sage

Tender perennial used to flavor fruit dishes, teas, and jellies.  Beautiful spikes of red flowers appear in late summer and fall and are highly attractive to hummingbirds and butterflies.

Rosemary

Perennial evergreen shrub that prefers a limey soil.  It is highly aromatic.  Used to flavor meat dishes, soups, and stews.  Small branches can be stripped of leaves and used as skewers.  Attractive blue flowers in the spring.  Both upright and trailing forms are available.  The varieties Tuscan Blue and Arp are winter hardy for our area.

Mint

This aggressively spreading hardy perennial comes in a wide range of flavors and will grow in sun or part shade.  Used in drinks, gum, sweets, and jellies. The plant can be used fresh or dried, as an ingredient or a fragrant garnish. Some varieties include peppermint, spearmint, apple mint, chocolate mint, and pineapple mint.

Sage Golden

Hardy perennial used to flavor stuffing, sausage, meat, poultry, and game.  Can be used fresh, frozen, or dried.  The standard variety has grey green foliage, but golden, purple, and variegated forms are available all with the same taste and fragrance.

Aromatic, evergreen perennial used as a groundcover as well as a culinary herb.  Used for poultry and fish dishes.  The standard variety has green leaves, but variegated and lemon flavored forms are also available.
